French Vanilla Ice Cream

2 c. milk
4 egg yolks
⅔ c. sugar
⅛ tsp. salt
2 c. cream
½ tsp. vanilla
Scald milk in double boiler and pour slowly, whisking all the while, over egg yolks mixed with sugar and salt. Return to double boiler and simmer till the mixture coats a spoon. Chill in refrigerator, add cream and vanilla, and freeze in an ice cream maker according to manufacturer’s instructions.
Variations:
Peanut Brittle Ice Cream: Grind peanut brittle to make 1 c. and add when ice cream is partially frozen.
Peppermint Ice Cream: Grind peppermint candy to equal 1 c. Omit vanilla and decrease sugar to ½ c. in foundation recipe. Add candy when ice cream is partially frozen.
Sour Cream Chocolate Ice Cream: To the foundation custard recipe add 2 oz. melted bittersweet chocolate and chill. Replace cream with 1 c. milk and 1 c. sour cream mixed with ⅓ c. sugar.
Strawberry Ice Cream

4 c. strawberries
1 c. sugar
6 egg yolks
1 qt. half and half
pinch salt
Wash berries thoroly, hull, and cover with half the sugar. Mash together and set aside. Mix yolks, half and half, salt, and remaining sugar, and heat over medium flame till bubbles just begin to form at the edges, but do not allow to boil. Allow to cool, then mix with strawberry mixture. Place in ice cream maker and freeze according to manufacturer’s directions.
